Nasu Dengaku Sweet & Sour Broiled Eggplant

Nasu Dengaku Sweet & Sour Broiled Eggplant is a delectable Japanese dish that combines the richness of eggplant with a sweet and tangy glaze. The tender, melt-in-your-mouth eggplant is grilled to perfection, then generously coated in a flavorful sauce, creating a harmonious balance of flavors.

Ingredients:

  • 4 eggplant, cut in half lengthwise and stems removed
  • 1 tbsp apple juice
  • 1 tbsp cranberry juice
  • 2 tbsp rice vinegar
  • 1/4 c. white miso paste
  • 3 tbsp agave nectar or honey
  • 1 tsp sesame oil
  • 2 tsp sesame seeds
  • 1 green onion, sliced

⁠Directions:

  1. Preheat the broiler and set the oven rack about 6 inches from the heat source (or preheat to 425°F if you don’t have a broiler).

  2. In a small saucepan over medium heat, warm the apple juice, cranberry juice, and vinegar. Stir in miso paste and agave nectar or honey until dissolved. Reduce heat to low and keep warm, stirring occasionally.

  3. Brush the cut side of the eggplants with sesame oil and place them cut side down in a shallow baking pan. Broil for 3 minutes, checking occasionally to prevent burning.

  4. Flip the eggplants over and broil for another 3 minutes until golden brown and tender.

  5. Spoon the miso mixture onto each eggplant and broil for about 1 minute until the glaze becomes bubbly.

  6. Garnish with sesame seeds and sliced green onion. Serve hot!
