Ginger Almond Ramen Stir-fry Recipe

Ingredients:

  • 1 lb Bombolini Ramen Noodles
  • 1 lb Twin Oaks Tofu
  • 1 bunch Bok Choy
  • 3 oz Fiji Ginger Almond Butter
  • 6 oz Sijang Chili Crisp (to taste)
  • ¼ cup Soy Sauce or Tamari
  • 2 tablespoons Sesame Oil
  • 1 tablespoon Seasoned Rice Wine Vinegar
  • 1 clove garlic, minced (or ¼ teaspoon powdered garlic)
  • ½ teaspoon Ginger Powder
  • ⅓ cup hot water

Instructions:

1. Prepare the Sauce:

  • In a mixing bowl, combine 3 oz of Fiji Ginger Almond Butter, soy sauce or tamari, sesame oil, seasoned rice wine vinegar, minced garlic, ginger powder, and hot water. Whisk well until emulsified.

2. Prepare the Tofu:

  • Cut the tofu into 1-inch cubes.
  • In a small pot, bring 3 cups of salted water to a boil.
  • Add the tofu cubes to the boiling water and let simmer for 5-10 minutes.
  • Strain the tofu and toss lightly with 2 tablespoons of soy sauce or tamari and 1 tablespoon of sesame oil.
  • Lay out the tofu cubes on a baking sheet lined with parchment paper and bake at 400°F for 15-20 minutes.
  • Remove from the oven and let rest for 5 minutes. In a large bowl, toss the baked tofu with ⅓ cup of the prepared Ginger Almond Sauce.

3. Prepare the Noodles:

  • Fill a large pot with 3-4 quarts of water and salt generously. Bring to a boil.
  • Add the Bombolini Ramen noodles to the boiling water and cook for 1-2 minutes.
  • Drain and rinse the noodles. Toss with 1 tablespoon of sesame or neutral oil and ½ cup of the prepared Ginger Almond Sauce.

4. Prepare the Bok Choy:

  • Wedge the bunches of bok choy into quarters.
  • Heat a large sauté pan over medium-high heat and add a neutral cooking oil.
  • When the oil begins to smoke, add the bok choy and cook rapidly until lightly charred, about 5 minutes.
  • Toss in minced garlic, salt, and a splash of rice vinegar and soy sauce. Remove from heat.

 

5. Assemble your bowls:

  • Start with a base of prepared ramen noodles.
  • Add the cooked bok choy and tofu.
  • Drizzle with the remaining Ginger Almond Sauce and Sijang Chili Crisp to taste.
  • Personalize your bowls with fresh veggies, herbs, Lindera Lemongrass Ponzu, or any desired garnishes such as sliced bell pepper, julienned carrots, spring onions, cilantro, onion or garlic chives, or microgreens.
