This Butternut Squash, Apple & Ginger Soup is a perfect balance of sweet and savory, with the natural richness of squash, the tartness of apples, and a touch of warmth from fresh ginger. It’s velvety, comforting, and packed with seasonal flavors—perfect for an easy weeknight meal or meal prep for the week ahead.
Ingredients:
- 2 butternut squash, peeled and cut into chunks
- 2 bunches scallions, chopped
- 4 Granny Smith apples, peeled and quartered
- Fresh ginger, peeled and sliced
- 8 cups stock of your choice
- 4 tbsp olive oil
- Salt and pepper to taste
- 1 tbsp butter (optional)
Directions:
- Heat olive oil in a heavy-bottomed pan over medium heat. Add scallions and ginger, cooking for 3-4 minutes until fragrant.
- Reduce heat to low, then add squash and apples. Stir well, season with salt and pepper, cover, and simmer for 20-25 minutes, stirring occasionally.
- Pour in stock and bring to a boil for 5 minutes. Remove from heat and blend with an immersion blender until smooth.
- Stir in butter until melted, then serve with a dollop of sour cream. Enjoy!
