Ingredients:
- 2 Butternut Squash, peeled cut into large chunks
- 2 bunches of scallions, chopped
- 4 Granny Smith Apples, quartered and peeled
- Fresh ginger, peeled and sliced
- 8 c. of the stock of your choice
- 4 tbsp olive oil
- Salt and Pepper to taste
- A little butter at the end
Directions:
- In a heavy bottomed pan over high heat add the olive oil and then the scallions and ginger. Cook for 3-4 minutes or until fragrant.
- Reduce the heat to low and add the squash and apples, mix everything together and add salt and pepper to taste. Cover and let simmer for 20-25 minutes, stirring frequently.
- Add the stock and bring the mixture to a boil for about 5 minutes. Remove from the heat and blend with an immersion blender until everything is smooth, then add 1 healthy pat of butter and gently stir around until the butter has melted.
- Serve with sour cream and enjoy!
