Lemony Leafy Greens

Chef Christine’s recipes are all about balance and flavor, and these lemony leafy greens are a refreshing side dish that pairs beautifully with your Valentine’s Day meal. Taught in her virtual cooking class, this dish is the perfect way to lighten up your romantic dinner.

Ingredients

  • 1 tablespoon olive oil
  • 1 clove garlic, finely chopped
  • 1 lb fresh rainbow Swiss chard, kale (stems removed) and finely chopped, or spinach (or your favorite leafy green)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

  1. In a large skillet, heat the oil over medium-high heat.
  2. Add the garlic and cook for 30 seconds.
  3. Stir in the greens and cover. Cook for about 1 minute or until they are just wilted.
  4. Sprinkle with lemon juice and season with salt and pepper.
  5. Serve immediately.
