Ingredients:
- 1 cup buttermilk (or 1 cup milk + 1 tsp vinegar as a substitute)
- 1 egg, lightly beaten
- 1-2 tbsp oil
Instructions
- In a bowl, whisk together the buttermilk, egg, and oil until well combined.
- Gradually add the pancake mix, stirring gently until the batter is smooth (a few small lumps are okay).
- Heat a lightly greased griddle or skillet over medium heat.
- Pour about ¼ cup of batter per pancake onto the hot surface, leaving space between each one.
- Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
- Serve warm with butter and maple syrup.
