Ingredients:
- 2 Cups Wade’s Mill Pancake & Waffle Mix
- 2 cups buttermilk or whole milk
- ¼ cup liquid shortening (oil of your choice) or butter
- 2 eggs
For Pancakes:
- Combine all wet ingredients. Stir in pancake mix until smooth. Pour onto a hot griddle or pan, 3-4 inches apart and cook on both sides until golden brown.
For Waffles:
- Separate the egg whites and yolks. Combine milk, shortening, and yolk. Stir in waffle mix until smooth.
- In a separate bowl, whisk the egg whites to stiff peaks (approximately 2-3 minutes of vigorous whisking). Gently fold into the batter. Pour onto waffle iron and cook 4-5 minutes or until golden brown.
